Celebrate Anything Sheet Cake
Craving something sweet, chocolaty, decadent? This sheet cake is just what you are looking for. Not to mention that it is simply fool-proof. It is easy, quick and absolutely delicious! Maybe I should rename it, don’t need a reason sheet cake, because from start to finish takes about 40 minutes! Try it out. Let me know what you think.
Cake Ingredients
2 C Flour
2 C Sugar
2 Eggs
1/2 C Buttermilk
1 tsp baking soda
1/2 tsp kosher salt
1 C Butter
1 C Water
4 Tbs. Unsweetened Cocoa Powder
Frosting Ingredients
1/2 C Butter
3 Tbs. Unsweetened Cocoa Powder
5 Tbs. Heavy Cream
1 tsp. Vanilla Extract
2 oz Unsweetened Bakers Chocolate
16 oz. Powdered Sugar
1 Tbs. Milk
Directions
Heat oven to 350*. Mix all dry ingredients for cake. In a saucepan, melt butter cocoa powder and water until almost boiling. Wisk to combine. Remove from heat. Mix eggs and buttermilk into dry ingredients and then while mixer is at low speed, pour in warm chocolate mixture. Mix until just combined. Butter a 9x13 baking dish and pour in cake batter using rubber spatula to get everything out of the mixing bowl. Place on middle rack in oven for 30-35 minutes. Cake is finished when a toothpick stuck in the center comes out clean.
While cake is baking, heat butter, cream, vanilla, cocoa powder and bakers chocolate over medium heat. Take care not to heat too much or you risk ‘breaking’ the sauce. Wisk sauce to combine ingredients well and take off heat. Pour powdered sugar into mixing bowl and on low speed pour in chocolate sauce. Add Tbs. of milk and mix to combine. Let cake cool for about 5 minutes and then spread frosting carefully over warm cake. (Optional) lightly sprinkle with flaked salt or chopped pecans.
